Carnivore nutrition is best understood as a clinically applied elimination diet built on established metabolic science — not as an influencer trend. — My health journey began in 2011, when I was diagnosed as prediabetic. Rather than accepting a slow progression toward medication and decline, I did what I’ve always done — I started asking questions. A lot of them. I’m naturally curious, investigative, and data-driven. Over the years, I immersed myself in nutrition science, metabolism, endocrinology, and behavioral health, following the evidence wherever it led — even when it challenged long-standing dietary dogma. Books on insulin resistance, chronic disease, food policy, and metabolic health reshaped how I understood the human body and the role modern food plays in disease. That path eventually led me to low-carb, then keto, and finally to a carnivore / ketovore approach in 2023. The shift wasn’t ideological — it was practical and evidence-based. I track biomarkers, symptoms, labs, and trends over time, and I adjust based on results, not beliefs. What life looks like now is both simpler and more stable. I’ve been alcohol-free since 2017. My diet is very low-carbohydrate — typically under 10 grams per day. Time-restricted eating and intermittent fasting are part of my day-to-day routine, not as rigid rules, but as tools that support metabolic health, mental clarity, and consistency. These days, my approach is heavily influenced by the clinical insights, research, and metabolic protocols developed by the Society of Metabolic Health Practitioners. Their work has helped refine how I think about insulin resistance, metabolic dysfunction, and sustainable health interventions—grounding personal experimentation in a broader clinical and scientific framework. My goal is continued metabolic health, strength, and longevity —while staying intellectually honest and open to new data. I’m here to learn, compare notes, and share what I’ve observed along the way in a respectful, evidence-forward way. If my experience helps someone else ask better questions — or feel more confident experimenting thoughtfully with their own health — then it’s worth sharing. stevengraff@icloud.com

@Lynda, during today's event, you said that with the lion diet one shouldn't add fat to the meat. I can understand how that would apply to processed fats like butter & tallow, but I am a bit puzzled how fat trimmings from ruminant animals would be any different from the fat that is left around the perimeter of a steak or the fat-cap on a brisket?

@Rina, after listening to the December Q&A, I wanted to share a symptoms table for insufficient hydration, along with a simple rule of thumb: daily water intake is 0.5–0.7 ounces per pound of target body weight. As you and @Lynda often point out, inadequate salt intake can create problems and is closely tied to hydration.

@Dean, consider introducing pork belly and pork shoulder steaks to help with satiety and adding the fat you are after.

A great alternative to sardines is mackerel, and you can get it fresh. Like a Ribeye, because of its high fat content, it tastes great when seasoned simply with salt and grilled. Grilled mackerel is quite common in Japanese restaurants, a great way to try it before you attempt to cook it at home.
