I have always had weight issues and edema issues. Dealt with PCOS my entire life. Have thyroid cysts and lipomas. So a very cystic body right now. Have been through menopause. Seems like I have to work really hard to loose any weight. When I heard that carnivore helped others with insulin resistance which basically PCOS is, I was on it. My goal is to walk on average 2 hours a day and I garden on the weekends. I need to be healthy since I take care of a family member as a caregiver. I would say a big passion of mine is the regenerative agriculture movement. Especially how pasturing cattle on a scheduled rotational basis actually brings the environment back to life and can provide healthy meat products we need. Healing the planet and us! There is an awesome rancher in US that healed his land so much even beavers came back with this type of protocol. Also a rancher in Mexico is turning the desert into life dense grasslands just by doing rotational grazing. I also enjoy learning how things were done by hand before all the industrialization. It is becoming lost knowledge and skills are being lost that could be practical and helpful for these uncertain times. Spiritually I really enjoy studying the Bible and gaining its wisdom, and help others learn from their own copy of the Bible with free studies.

Got my eggs from the neighborhood farmer’s market and to my pleasant surprise he had three different eggs which I bought: chicken, quail, and duck! Was told quail has more iron and the duck has nutrients good for the brain. Can anyone verify if factual? Check out how big the duck egg is compared to chicken.

Attempting to eat more rare meat and doing it simply with ground beef I am trying to just take a full pound of Piedmontese 80/20 beef completely thawed straight from the vacuum sealed packet and air frying it. I use a Ninja Foodi and first attempt looks pretty good. Once I hit the perfect temp and timing I will share. Have a blessed day all!

So I tried pressure cooking beef tendons after reading a suggestion to do so online. No real good instructions on what settings. So I ended up actually melting all of them! Yes they melted! So apparently too high for too long. But when I refrigerated the liquid, the most amazing gelatin formed. Looking forward to that great collagen!

I tried making butter mayonnaise and it got hard in the fridge. I was hoping that it would stay softer and little more creamy like mayonnaise . But does that mean I didn’t whip it up correctly or does it just get hard because it is made with butter? I would love any suggestions to make a better butter mayonnaise. Thank you!!
