12 days agoSlow cooked OXTAIL for the first time - InstantPot, 5 hrs in beef broth, high slow cooker setting. Completely tender, totally delicious! Cooled broth, removed fat, broth became a collagen-rich gel. Removed larger solid fat to air fry and pieces became ultra crispy, almost like pork rinds. Breakfast & lunch - satiated all all day!

12 days agoNearing end of 30 Day Challenge - in 10 Day Lion Reset - omitting caffeine, dairy, eggs - just eating iruminant meats. At first I missed daily eggs, coffee, dairy. However, noticed immediately flatter stomach all day - no matter how much meat I eat. Happy/Sad because I love eggs and dairy. I'll see what happens when I add them back one at a time.

17 days agoI made these carnivore biscuits using eggs, heavy cream powder, and baking powder, and they are very good. I melted some raw cheese and put it on top - delicious!

17 days agoGoing into 4th mo carnivore, although I began making changes to fix my metabolic concerns 2 yrs ago this month. Today I'm over 40 lbs down, have gained muscle, built strength, improved sleep, have zero digestive issues, and bio markers continue to improve. It just takes time, patience, self-love and acceptance to undo what has taken years to do.
